About the authors
Eva and Nicolai Tram have their roots in the culinary world: Eva as a sommelier and culinary reviewer, Nicolai as a chef in top restaurants and TV producer. In 2017, they exchanged Copenhagen for the Swedish forests, seeking a better work-life balance. Their passion for campfire cooking led to the establishment of restaurant Knystaforsen, where open-fire cooking is central. This restaurant was awarded a Michelin star and a Michelin Green Star for sustainability in 2022.
